Today is World Pasta Day! And to celebrate, the folks at Barilla sent me a box of my favorite carbohydrate and the entirely delicious Dinner, A Love Story Cookbook for inspiration.
In this house pasta makes a regular appearance on the dinner plate. An economical and versatile pantry staple, pasta helps me put a nutritious dinner on the table in a jiffy.
According to the info-graphic above, 88% of parents are multi-tasking each day and claiming that they are 58% busier than they were a year ago. Folks are finding it hard to squeeze in time to make a healthy supper.
74% worry that they won’t provide enough nutrition to their families, while 65% worry that they won’t spend enough time with their family around the dinner table.
That’s a lot of worrying.

I chose to whip up the Barilla Creamy Fettuccine with Italian Sausage and Leeks for last night’s supper. All told, it took me 25 minutes from start to finish to serve this up to my very hungry family.
Everyone gave it two thumbs up, even my usually carb resistant daughters….
My food photography assistant almost ate my photo subject. She was promptly fired and replaced by an equally hungry assistant with more restraint.

1 box of Barilla Fettuccine
1 lb Italian sausage, casings removed and crumbled
2 leeks, thinly sliced
1/2 cup white wine
1 cup 1/2 half-and-half
1/3 cup Parmigiano-Reggiano cheese, grated
salt and pepper to taste
chopped parsley for garnish
Cook fettuccine according to pkg directions. Cook sausage is large skillet until browned. Drain fat. Add leeks and cook for three minutes. Add wine and cook until it reduces down by half. Add half-and-half, salt and pepper and simmer for five minutes. Toss cooked pasta into skillet with sauce. Top with cheese and parsley. Serve!
YUM!! You’d have to fire me too because I would eat that delishciousness.
Lol, I shouldn’t have asked for help when everyone was hungry. Restraint was a short commodity around here.
